This Valentine's Day, my niece was having a party and asked me to make red velvet cupcakes for the event. She talked about these cupcakes every time I saw her for a month solid. The funny part is, I never once told her I was definitely making them! Ahhh the faith of a 10-year-old!
So of course, I made her cupcakes. And of course, I made the red velvet cupcakes she so desperately wanted. I have never made red velvet anything before. Or cream cheese frosting for that matter. After the cupcakes were all done, my husband and I tasted them and we thought they were pretty darn good, but I was worried about what my sister and niece would think of them. Like I said, this is something I've never done before! I guess I need not have worried because during the party, I received a text from my sister that said "OMG fabulous"...I knew exactly what she was talking about! So I asked her if she really liked them and she said they were so fabulous she just hid one for herself!
My internet access is still very limited at this point, but once I am able, I will post pictures of all of the Valentine's Day cupcakes I made, including the red velvets.

Valentine's Day
This Valentine's Day has definitely been different from previous ones. This year, I had cupcakes to bake...and a lot of them! I had 20 funfetti and 20 chocolate chip cupcakes to make for a school party, 15 red velvet for my niece's Valentine's Day party and 12 variety cupcakes to be given as a gift. I baked my heart out! Which is very appropriate, considering the holiday :) I hope you all had a fantastic Valentine's Day with your loved ones!

Birthday fun
We celebrated my youngest son's 1st birthday this week. It was a fun party with a year of 1st's type theme. The colors were red, orange, green and blue and we had pictures and polka dots everywhere. To be quite honest, my house looked like a scrapbook and we loved it! So with red, orange, green and blue dots, what's more appropriate than funfetti cupcakes?
Don't worry, I made a smash cake for the birthday boy, too.
Cheerleaders
Here are the cupcakes I made for the Elkhart Christian Academy cheerleaders. The school colors are purple and white and their mascot is an eagle. I couldn't find anything eagle on the short time-span I had, so I decided to go with girly. What's more girly than a cheerleader?

Samples
Last week, I made up a couple dozen cupcakes and sent them out as samples. I'm loving all the feedback I'm getting! Definitely makes things exciting! One of my biggest fears was that after my first few orders that everything was going to die down and fizzle out and my cupcakes would be no more....but NO! Things are still going great and I'm still loving it!
I received an order for some school spirit cupcakes. The colors are purple and white - could it be any more fantastic than that?! Those are for Friday, so I will post pictures after those are all done.
We are also considering renting a commercial kitchen or considering places to rent for a storefront. I'm starting to get more and more orders and it's time to start considering this. I'm not sure when anything like this will happen. It might be in 6 months, it might be next year, but it's definitely time to start thinking about it and keeping our eyes open. Big shout out to my sister right here, too. She's a real estate agent and definitely has our best interest at heart.
The last week has definitely been a whirlwind!

Christmas joy
This Christmas, I got a Kitchenaid Artisan stand mixer. Words cannot fully express my excitement! Ohhh the cupcakes I will make with this mixer. I still haven't used it yet, which seems crazy, I know, but it's just so beautiful sitting on my counter all brand-new and shiny. I have big plans for that mixer, including two new cupcake ideas. More on that later.

Christmas parties
Earlier this week I had two parties to make cupcakes for. I needed 40 cupcakes for a children's school Christmas party and 48 cupcakes for a work Christmas party. They were both a mix of devil's food, strawberry & vanilla. They were my neapolitan cupcakes :)
The cupcakes for the school party were requested to be fun and festive. That I could handle.
What's more fun and festive than snowmen and Rudolf?
The adult Christmas party cupcakes were festive, also, but definitely more adult.
These ones are just green sprinkles and then crushed peppermint candies.

Strawberry
I tried a new strawberry cupcake recipe a few days ago and can we just say delish! There may be a foot of snow on the ground outside, but the smell of those beautiful strawberries being pureed was pure delight and made me think of summer...*sigh*.
They all had a beautiful pink color to them , but as me & my husband quickly realized, the first batch definitely needed more strawberry! The second batch were much more strawberry-ish. We are definitely loving these cupcakes!

No internet
I need to apologize for the lack of posts/updates lately! I have no internet at my house and life with 2 young boys gets hectic at times; so getting in front of a computer with internet is not always the easiest thing.
I've done 2 sets of birthday cupcakes since my last post. Nothing exciting, but I've been getting lots of good feedback. I have a strawberry cupcake recipe I want to try (yummmmm), but when I went to buy strawberries at the store they were all out (boooooo). My sister likes to frequently brainstorm with me and contribute ideas and this one I think is rather fabulous. I'm going to make mini-cupcakes to give out as samples...give 'em just enough to make 'em want more :) No, that's not the idea. The mini-cupcakes are just enough to give people an idea of the cupcakes and the possibilities PLUS they are easier to make and transport and can be made easily made in mass.
